Burrata is a fresh. Italian cheese made. from Fior di latte mozzarella and fresh California cream. We take a fresh Fior di latte ball while still warm and fill it with a Stracciatella, hand pinch the end and submerge in chilled water to firm the outer skin. Stracciatella is made with fresh mozzarella curd and California Fresh Cream.
