Through this glimpse ahead, you'll see what's possible when things like zero-waste production, upcycling, regenerative farming, and climate-smart sourcing become the norm rather than the exception. It's reverse archaeology: instead of digging up the past, revealing what's being built right now. You'll leave understanding how the specialty food makers at this show are creating the food system that future depends on.

(10:30 am - 12:30 pm) Vermont Creamery: From Cow Power to Food Waste Solutions, Powering Dairy with Purpose
- Vermont Creamery is committed to making dairy that tastes better because it’s made better. Their goal is to craft extraordinary products while dedicating equal energy to creating a positive impact on the world. They source all electricity from Green Mountain Power’s Cow Power program, turning cow manure into renewable energy—a major step forward for Vermont’s energy supply. Since April 2022, they’ve diverted over 2,750 tons of inedible food waste to Vanguard Renewables’ digester, preventing nearly 1,600 tons of greenhouse gas emissions—the equivalent of taking 350 cars off the road for a year, planting 26,000 trees, or charging 530,000 cell phones. Every initiative reflects their belief that sustainability and great taste go hand in hand.
